One stock that is essential for every home chef and every chef in the industry is dashi. Dashi is Japanese for, “Soup stock or broth.” Dashi can be traced all the way back to the Jomon Period in Japan back 16,000 to 3000 years ago. Japan has a deep history of veganism and vegetarianism with connection to a common Shinto beliefs.
this stock is very hearty and filled with many benefits. For example:
| Awase | standard made with katsuobushi and kombu. delicate and aromatic flavor. |
| Kombu | Plant based dashi made with just kombu. light and flavorful base. |
| Niboshi | Made from small dried fish like sardines or anchovies. deep rich flavor with a bit of bitterness at the end. |
| vegan | plant based with kombu and died shiitake mushrooms. it has a mild, earthy flavor. |
this time i wanted to make a dashi that was going to be pretty strong in the fish flavoring department. i wanted a deeper umami, so i added in dried anchovies into my dashi. so we started off with distilled water in a pot. depending on how strong you want it to be then that’s how you add in your ingredients. you do not want the stock to boil just a small simmer. once it starts to bubble on the top get a spoon and collect the bubbles from the top.

some people differ in technique at this stage. you can decide to go the route of steeping your ingredients or low simmer for about 30 min. if you decide to steep your ingredients bring your pot to a simmer not a boil. a boil is to aggressive for the flakes, consider the bubble size. we want to bring it to a simmer. then put a lid and turn of heat let steep for about 30 min.

after that strain and cool for storage. I labeled and dated mine with tape cooled in the fridge with it uncovered. you can use dashi for a variety of different dishes, examples are soba noodles, sauces, soups, seasoning etc.
note: there is another way to make dashi, it is a more faster way that doesn’t require much, you just need to know what to buy. That ingredient is H\** Dashi

- 1 large pot
- 1 fine mesh sieve
- 1 laddle
- cheese clothe
Ingredients
- 2 sheets Kombu
- 2 cups Bonito Flakes
- 1 cup dried anchovies
Instructions
- FILL POT WITH WATER. BASED ON STRENGTH OF STOCK ADJUST AMOUNT.
- BRING TO A SIMMER, REDUCE HEAT AND COVER AND LET STAND FOR 30 MINUTES.
- CLEAN SCUM OFF OF TOP OF WATER.
- STRAIN WITH A FINE MESH SIEVE AND A CHEESECLOTH. RESERVE AND REFRIGERATE FOR LATER USE.
